Terre Calde was born from the dream of producing and marketing healthy and genuine food products, characterized by a unique taste and nutritional properties. This is thanks to the influence of the extraordinary growing environment where our estates are located: Molise. Terre Calde Onion is not just a “good” product in the kitchen, but it can also be a source of surprises in the preventive and therapeutic field due to its high content of phosphorus, magnesium, antioxidant enzymes, and essential oils. As a food, it is usually served cooked but can also be eaten raw or used to make pickles or mustards.

Quality

Terre Calde Onion is cultivated using advanced technologies and eco-friendly practices in the fertile lands of Molise, in central-southern Italy, sheltered from harsh winter temperatures and thermal variations.

The combination of these factors guarantees the exclusive quality of the product and gives it the characteristic aroma that is celebrated in kitchens around the world.

Properties

The onion is one of Italy’s finest horticultural products, widely used in cooking and available all year round, thanks to varieties with extended shelf life. Our product range mainly includes white, red, golden, and the Montoro copper onions.

The onion is not only a “good” product in gastronomy but can also be a source of surprises in the preventive and therapeutic field due to its high content of phosphorus, magnesium, antioxidant enzymes, and essential oils.

Organoleptic characteristics

  • Red Onion: Delicate taste, making it ideal for raw consumption in salads and cold dishes.
  • Golden Onion: Known for its strong flavor, recommended for slow-cooked dishes to mellow its sharpness and infuse dishes with its richness. Perfect for frittatas, sautéed dishes, stews, soups, and as a key ingredient in meat-based dishes like Genoese ragù.
  • White Onion: Mild flavor, ideal for baking, boiling, grilling, or gratinating.
  • Montoro Onion: Characterized by large, flat bulbs, very digestible, with a sweet and aromatic flavor.

Cultivation technique

  • Planting density: From 750,000 seeds/ha to 900,000 seeds/ha, depending on the variety.
  • Fertilization: Use of NPK fertilizers, potassium sulfate, and calcium nitrate.
  • Irrigation: Performed by sprinklers with mobile wings or sprinkler systems.
  • Crop care: Constant growth monitoring, regular phytosanitary control, and weather forecast monitoring.
  • Crop defense: Biological control of phytophagous insects and integrated control of pathogens through the use of appropriate agronomic practices.

White Onion

Bright white color, highly attractive, round, uniform bulbs of good size, high productivity. Medium to long-term storage. Harvest in late July – early August.

Golden Onion

Visually attractive onion due to both the color of the tunics and the uniformity of the bulbs and their firmness. Deep bronze-colored bulb.

Red Onion

Usage: Fresh market, processing.
Maturity: Mid-late.
Bulb: Round or elongated, medium-large size, firm.
Storage: Excellent.
Notes: Bright purple color, unmistakable. Its color is truly unique for intensity and brilliance, making it appreciated in all markets.

Montoro Onion

An extraordinary excellence that is still too little known. It produces large, flat bulbs, very digestible, and with a sweet, delicately aromatic flavor. Excellent both raw and cooked, with great cooking retention. It is one of the most long-lasting sweet onions, keeping for up to 6 months.
