Properties
The onion is one of Italy’s finest horticultural products, widely used in cooking and available all year round, thanks to varieties with extended shelf life. Our product range mainly includes white, red, golden, and the Montoro copper onions.
The onion is not only a “good” product in gastronomy but can also be a source of surprises in the preventive and therapeutic field due to its high content of phosphorus, magnesium, antioxidant enzymes, and essential oils.
Organoleptic characteristics
- Red Onion: Delicate taste, making it ideal for raw consumption in salads and cold dishes.
- Golden Onion: Known for its strong flavor, recommended for slow-cooked dishes to mellow its sharpness and infuse dishes with its richness. Perfect for frittatas, sautéed dishes, stews, soups, and as a key ingredient in meat-based dishes like Genoese ragù.
- White Onion: Mild flavor, ideal for baking, boiling, grilling, or gratinating.
- Montoro Onion: Characterized by large, flat bulbs, very digestible, with a sweet and aromatic flavor.
Cultivation technique
- Planting density: From 750,000 seeds/ha to 900,000 seeds/ha, depending on the variety.
- Fertilization: Use of NPK fertilizers, potassium sulfate, and calcium nitrate.
- Irrigation: Performed by sprinklers with mobile wings or sprinkler systems.
- Crop care: Constant growth monitoring, regular phytosanitary control, and weather forecast monitoring.
- Crop defense: Biological control of phytophagous insects and integrated control of pathogens through the use of appropriate agronomic practices.
